Francesco Miraldi

For years, Francesco Miraldi shaped the atmosphere at one of Zurich’s most prestigious gastronomic addresses. As head sommelier and a member of the management team, he was part of a world of renowned names. But for Miraldi, this path was not the ultimate endpoint of a career—it was a valuable school.

“I learned a lot in fine dining. But at some point, I realized that it’s less about the glamour and more about the people.”

With the takeover of Alte Laterne in Zollikerberg, he radically refocused on hospitality. He created a place centered on purist cuisine, quality products, and honest interaction. While preserving the cozy wooden interior, he invested in building technology and new hygiene standards. No glamour, no staging—just warmth, personality, and his deep love for fine wines, curated and also available through his webshop.

“I wanted a place where guest and host meet on equal terms. Enjoying without etiquette, in a relaxed way.”

An Entrepreneur with a Mission

His commitment doesn’t end at the kitchen door. Through Miraldi Gastro & Concepts GmbH, he founded a consulting and trading company with the mission of making gastronomy more socially, ecologically, and economically sustainable. For example, he implements small but impactful innovations, such as chemical-free ozone cleaning.

Francesco Miraldi sees himself as a new kind of host, eager to share and pass on knowledge. To encourage this exchange, he regularly opens his restaurant as a pop-up location.

Stories that Connect

For Miraldi, it’s the details and the people that give a place its soul. He brought back Rolf, who had worked over 40 years as a waiter in Zollikerberg.

“Rolf helped shape Alte Laterne. Bringing him back was a stroke of luck for both of us.”

Even the graphic design reflects high standards: the striking inn sign at the street comes from the same designer who created the logo for Singapore Airlines.

Professional Remains Professional

Taking the step into self-employment revealed that every concept brings new questions. In particular, Francesco Miraldi sought advice on temporary use, the right legal form, permits, and insurance.

The move into self-employment was a conscious decision for a different understanding of success: heart instead of glamour.
